Cmrečnjak Winery Cellar

The Cmrečnjak Winery cellar is where technology and time work together – without compromise and without haste. Everything begins with precise grape processing, controlled fermentation and full temperature control, to preserve purity and varietal character.

What defines the Cmrečnjak style happens after fermentation.

For fresh wines the focus is on clarity, freshness and balance.

For more complex wines – the cellar becomes a space of patience.

Sur lie approaches, ageing on fine lees, use of wood (from barriques to larger casks), and carefully dosed micro-oxygenation give the wines texture, depth and longevity. Nothing is done “by template”.

Every harvest and every wine line has its own approach. Some wines call for steel and speed, others for wood and time.

That flexibility allows Cmrečnjak to produce both crystal-clear fresh wines and serious, structured labels for ageing.

The cellar is not where wine is born – but where it takes its final form.

And that is why at Cmrečnjak wine is not released when it is “done”, but when it is ready!
